The Vermont Maple Sugar Makers' Association and Vermont Maple Foundation offers the following definitions as a guideline.

GOLDEN  COLOR  WITH DELICATE TASTE 
  • Golden color and delicate flavor.
  • Pour over vanilla ice cream for a Vermont maple sundae, sometimes called the Sugarmaker's favorite dessert.

AMBER  WITH  RICH  TASTE 

  • Amber color and rich flavor.
  • Seems to be the most popular for all around use. 
  • A good choice for gifts.

DARK  WITH  ROBUST  TASTE 

  • Dark color and robust flavor.
  • Good for all around use. 
  • It's hardy flavor is a great choice for all kinds of recipes.

VERY DARK  WITH  STRONG  TASTE 

  • Almost black in color with pronounced flavor
  • Full bodied flavor works well in recipes requiring stronger notes of maple. 
  • Also holds up well as a coffee sweetner.
